O artigo ap
resentado conta com inspiração d
a Sociologia Econômica e buscará
analisar o tema da alimentação saudável na França. Para isso, analisaremos discursos de
blogueiras e
influencers
francesas adeptas deste tipo de alimentação na rede social do
Instagram. Nosso
objetivo é trabalhar com três proposições teóricas: desvendar algumas
estratégias representacionais e simbólicas das agentes estudadas para além do
homo
economicus
; verificar propriedades elitizadas veiculadas com base em um mercado de luxo;
averiguar a e
vidência dos gostos e disposições dos agentes, bem como, de fragmentos de
trajetórias e motivações eventuais e ocasionais para direcionar esse tipo de consumo. O
método utilizado será a análise dos conteúdos da rede social de forma qualitativa. Nossa
análi
se evidencia a averiguação e a afirmação das três proposições de pesquisa supracitadas.

:
El artículo presentado está inspirado en la Sociología Económica y
buscará
analizar el tema de la alimentación saludable en Francia. Para ello analizaremos los
discursos de blogueros e influencers franceses adeptos a este tipo de comida en la red social
de Instagram. Nuestro objetivo es trabajar con tres proposiciones te
óricas: develar algunas
estrategias representativas y simbólicas de los agentes estudiados más allá del homo
economicus; verificar las propiedades de élite atendidas en base a un mercado de lujo;
investigar la evidencia de los gustos y disposiciones de los
agentes, así como fragmentos de
trayectorias y motivaciones ocasionales y ocasionales para orientar este tipo de consumos. El
método utilizado será el análisis de los contenidos de la red social de forma cualitativa.
Nuestro análisis evidencia la investig
ación y afirmación de las tres propuestas de
investigación mencionadas anteriormente.

ABSTRACT
:
The presented paper relies on inspiration from Economic
Sociology and will
seek to analyze the theme of healthy eating in France. For this, we will analyze the discourses
of French bloggers and influencers adept at this type of food on the social network Instagram.
Our goal is to work with three theoretical pro
positions: to unveil some representational and
symbolic strategies of the studied agents beyond homo economicus; to verify elitized
properties conveyed based on a luxury market; to ascertain the evidence of the agents' tastes
and dispositions, as well as,
of fragments of trajectories and eventual and occasional
motivations to direct this type of consumption. The method used will be the analysis of the
social network contents in a qualitative way. Our analysis evidences the verification and
affirmation of th
e three aforementioned research propositions.

Introdução
Um dos papéis fundamentais da Sociologia Econômica é buscar compreender como os
agentes tem influência sobre a
configuração e reconfiguração dos mercados, ou vi
sualizar
como as instituições
–
no presente caso, instituições invisíveis, a partir das difusoras ou
delegadas do mercado on
-
line
–
reprodu
zem estratégias de controle de
como
agentes
dominantes, por meio de
um espaço de interações que é econômico, mas também político e
social. Observa
-
se que essas agentes “militantes da alimentação saudável” podem utilizar
-
se
de instrumentos, tais como, movimentos sociais, construções sociais extremamente precisas
como as do
direito, da jurisprudência, da ética, e da justiça social (STEINER; VATIN, 2009).
Portanto, nosso primeiro movimento será o de invocar a Sociologia Econômica para o
presente artigo e
ultrapassar a batalha entre
homo rationalis
versus
homo culturalis
. Ou se
ja, é
preciso enxergar as múltiplas racionalidades e entender o interesse como um dado arbitrário,
ou seja, visualizar a possibilidade da existência de múltiplos interesses sempre determinados
pela construção social, no tempo e espaço específico, como assi
nalam Wacquant e Calhoun
(1989).
Evidenciamos, portanto, a emergência de um grupo de
players
e
influencers
digitais,
que mobilizam as redes sociais, intermediando e influenciando a ampliação deste tipo de
nicho ou mercado e observamos etnograficamente que
a maior parte dessas “delegadas” são
mulheres de classes médias e altas, orientadas por um eco
-
habitus
e por um estilo de vida
saudável. Por esta razão, o segundo movimento do presente artigo se dará em direção da
análise desses estilos de vida distintos
a
partir de suas postagens no I
nst
agram.
Num terceiro momento do artigo verificaremos com base em reflexões teóricas e
análises do campo que essas práticas não estariam somente atreladas a mecanismos

disposicionais de distinção, antes, essas atitudes, ações
ou escolhas se formatariam com base
em eventos, processos, acontecimentos e momentos bifurcacionais na trajetória das mesmas.
Fatos esses, que nos mostram como o mercado e as mudanças históricas no capitalismo
financeiro poderiam também intervir, mobiliza
ndo transformações dos gostos e estilos de
vida. Portanto, trabalharemos no presente texto com elaborações e reflexões com base nesses
três momentos supracitados.
A sociologia econômica
\
financeira e a alimentação
Observa
-
se que alguns autores compartilham de uma lógica racionalizadora e
calculadora do
homo economicus
para explicar o funcionamento das escolhas alimentares.
Marvin Harris (1986) com sua obra
Good to eat: riddels of food and culture
questiona a
análise
de Lévi
-
Strauss sobre a existência de uma carga simbólica, do pensamento e da crença
por traz das escolhas e ações sociais. Seguindo a postura funcionalista de Merton, procede
pensando que as ações se dão em função das condições materiais e ecológicas, e
não
simbólicas. A saber, as motivações que incidem na dieta para que judeus não comam porco, e
os indianos vacas são compreendidas por razões materiais, sanitárias, ecológicas e não
religioso
-
simbólicas

. Nesse sentido, o autor nos ajuda a pensar em nosso
tema de pesquisa,
na medida em que indagamos
–
a partir da reflexão da interdição e dos tabus, do que deve ou
não ser comido
–
com auspícios da instrumentalização da alimentação saudável, sobre quais
seriam as reais motivações dos comedores da
alimentação
saudável, justa, sustentável, ética e
ecológica
e, como esse tipo de mercado se desenvolve intensamente após os anos 2010 na
França?

Para o autor a motivação dos indianos não comerem carne de vaca está ligada ao fato de que as vacas são mais
úteis na Índia para usar a sua força motriz do que para serem usadas como alimento. No caso da proibição de
comer carne de porco para os Judeus, o
autor a justifica pelas condições ecológicas do Oriente médio não
permitirem que se execute a criação de porcos. A criação também custaria tempo, energia e uma alimentação
onívora, e além disso, o fato do porco precisar ser criado num ambiente longe do so
l (para conservar a
temperatura corpórea) aumenta as despesas de criação, já que esta deve ser realizada em locais fechados. O autor
ainda cita o caso do canibalismo dos ast
ecas, afirmando que
ele
também ocorre por razões “econômico
-
nutricionais”, já que e
sse povo não era acostumado a criar grandes animais herbívoros e tinham pouco acesso à
carne, à exceção do peru e do cachorro, que, no entanto, dispunham de pouca carne
(FISCHLER
, 1990).

A partir de 2010, o produto do
terroir
na França passa a ser visto
como sustentável, devido principalmente aos
debates ocorridos na conferência sobre sustentabilidade no Rio de Janeiro. Ao mesmo tempo, a origem, a
questão da segurança do consumidor com relação aos produtos, e as crises alimentares, se transformam e abrem
espaço para a conotação do produto “local”. Ou seja, a mercadoria valorizada não será mais a exótica, o
excepcional, mas sim a cotidiana, a banal. A partir deste momento abre
-
se a possibilidade de se pensar o produto
local, regional, do campo, que não pass
a por processos intensos de industrialização, como produto bom para
saúde.

irá nos ajudar a construir a nossa proposição que se alicerça sobre as
ações sociais representadas por símb
olos e valores dentro de um
constructo
social. Nesse
sentido, o movimento que Morin (1973) faz nos anos 1970 vai nos permitir refletir sobre uma
sociologia do comedor, já que nossas atividades biológicas como, comer, defecar, beber, são
estreitamente ligad
as a interditos, a valores, símbolos, mitos, ritos, ou seja, o que há de mais
especificamente cultural. Em 1985, a obra
Antropo
-
sociologie de la cuisine et des manières de
tables
dirigida por Morin inaugura uma série herdeira do estruturalismo de Lévi
-
Stra
uss e da
antropologia do imaginário, que nos traz aparatos teóricos para veicular nossas proposições
(DURAND, 1960).
Apesar das explicações materialistas de Harris (1986) o processo de transformar
objetos naturais em alimentos e nutrientes não se reduz a l
ógicas utilitárias ou de
disponibilidade (SALHINS, 1976), antes, se inscreve dentro do sistema de classificação
(DOUGLAS, 1971)

. A alimentação apresenta uma lógica de racionalidade que se registra por
meio das representações, do imaginário e da cultura,
ou seja, a necessidade biológica de
comer também se insere dentro de um sistema de valores que se articulariam sobre lógicas
totêmicas, (LÉVI
-
STRAUSS,
1962) sacrificiais, (GRODZYNSKI; DÉTIENNE; VERNANT,
1980), higienistas, racionalistas, estéticas, ou comb
inando várias formas de racionalidades,
que classificam os alimentos em vegetais e animais, consumíveis e não consumíveis (lógicas
classificatórias).
Para além da discussão sobre a lógica utilitária de disponibilidade ou simbólica dos
alimentos, podemos ci
tar uma tese sociológica que tem sido seguida por estudiosos que se
alia
a reflexão sobre consumo e gosto. Autores como M
oulin (
1975
),
E
lias
(
1973
) e
L
ambert
(
1987) vão advogar pela tese de que o mundo está se “aburguesando”, no que diz respeito ao
consumo
de alimentos. Ou seja, isso quer dizer que, o gosto e o estilo de vida burguês tem se
alastrado pelo mundo, contaminando outras classes sociais e se tornando legítimo. Quando
pensamos sobre a alimentação de tipo saudável ou ecologicamente viável, podemos
nos
perguntar se este não seria o caso, já que, vemos que este tipo de alimentação, tipicamente
valorizada pelas classes mais altas ou de elite, tem começado a se alastrar por todos os
supermercados, feiras, lojas, restaurantes, b
istrôs, tanto f
ranceses co
mo brasileiros. A

A explicação simbólica que Douglas (1971) encaminha para a proibição da ingestão de carne de porco para os
judeus é bastante ilustrativa: os interditos hebraicos se explicam devid
o uma “anomalia taxonômica”, ou seja, o
porco não encontra espaço dentro das categorias usadas pelos hebreus para explicar o mundo. As proibições se
conectam ao Gênesis quando se remetem a céu, terra e água. Logo, a cada uma dessas categorias, existem
anim
ais que lhes são próprios. No caso do porco, ele não é um animal consumível como os descritos no texto de
levítico XI “Todas as bestas que tem os pés com unhas, unhas fendidas e que ruminam vocês comerão”. Ora o
porco tem unha, unhas fendidas, mas não rumi
na. Portanto ele consiste numa anomalia taxonômica para os
judeus antigos.

percepção que temos é a da ocorrência de um processo de massificação dos produtos
saudáveis ou isomorfização (orgânico

coloca referente a
sociologia dos gostos e o estudo das classes é se esse tipo de consumo se espraia para todas as
classes sociais e clivagens, ou se fica restrito à uma minoria elitizada?

direcionariam as condutas para um consumo de produtos mais sadios e equilibrados, por parte

No entanto, os aut
ores percebem que para além das propriedades inscritas dentro das
trajetórias dos indivíduos, existem outros elementos que devem ser levados em conta em todo
o processo de consumo, a saber, as mudanças sociais que ocorrem ao redor dos indivíduos e
dos esti
los de vida. Ou seja, a pista dos autores circunscreve
-
se por traz das ações cotidianas
diárias, ou das práticas alimentares diárias e de como elas se alteram com as circunstâncias e
os imprevistos, modificando a rotina alimentar, mesmo dentro de uma traje
tória biográfica
prescrita e marcada por determinadas propriedades e capitais. Logo, os autores refletem sobre
uma redefinição da ideia de “disposição” ou disposições sociais, pois a sociologia dos gostos
reflete sobre as disposições construídas pela famíl
ia, amigos e não conta com o fato de que as
disposições podem ser modificadas de acordo com os mecanismos de mediação do mercado,
ou outros fatores sociais que se inscrevem com base em processos interacionais mais

Acreditamos que outras análises precisam ser feitas para esta verificação. No Entanto, seguimo
s a pista de qu
e
diferentes grupos e estratos tê
m incorporado esse tipo de alimentação saudável na França, à sua maneira. Muitas
vezes não conseguem ter acesso aos produtos de lojas mais caras, no entanto, encontram outros meios de acessar
esses alimentos
em grandes plataformas de supermercados, através do circuito curto e de associações de bairro.
Não acreditamos que esta lógica esteja disseminada entre os grupos populares, mas ela começa a ser valorizada
por esses grupos aos poucos. Essas afirmações se dã
o a partir do estudo etnográfico que realizamos na cidade de
Paris no ano de 2019 e 2020 em nosso pós
-
doutorado.

específicos, ou do que podemos indicar com
o paradigma interpretativista, discutido por

Problemática e proposições analisadas
Após realizarmos a reflexão teórica supracitada elencamos três proposições que
poderão ser analisadas a partir dos perfis de blogueiras e influenciadoras digitais francesas.
Tais quais:
Proposição 1:
não há somente uma busca de interesse egocentrada pelo m
elhor
custo benefício pela compra do alimento saudável, antes, existem estratégias simbólicas e
representacionais direcionadas pelos agentes;
Proposição 2:
uma possível inovação social na
alimentação saudável advém dos grupos de elites que evocam narrativa
s (tradicionais, rurais,
de retorno a natureza);
Proposição 3:
as motivações de consumo para alimentação saudável
podem ser múltiplas e não somente disposicionais (
a saber,
motivos de saúde, bem
-
estar,
preocupação com corpo, reivindicações
coletivas e ecológicas).
As blogueiras e
influencers
digitais dentro da economia de plataformas e da economia
financeirizada
Antes de discutirmos os dados sobre a atuação das blogueiras e
influencers
francesas
nas redes sociais é importante que as situe
mos contextualmente frente as mudanças do atual
capitalismo e suas novas formas de atuação. Um dos elementos importantes que marcam a
performance dessas agentes hodiernamente é a entrada na denominada economia de
plataformas, que marca a passagem de uma no
va economia dos anos 1990 para uma economia
digital a partir dos anos 2000. Logo, a plataforma pode se formatar como uma nova forma de
organização empresarial que se apresenta como novo modelo de negócio.
Nesse sentido, no caso do mundo digital, diferente
de uma feira da idade média, os
market makers
fazem a coordenação e gerenciam o mercado através de plataformas digitais
tais como, Airbnb, Uber, iFood, Gympass, Arco Educação, 99, Nubank dentre outras. Cabe
mencionar que algumas plataformas se manifestam c
omo rede social (como é o caso do
facebook) e outras se articulam através das mídias sociais (SILVA NETO
;
BONACELLI
;
PACHECO, 2019)
.
No caso da intervenção da
s
blogueiras e
influencers
, as visualizamos através de uma
espécie de ação intermediária do proces
so de mercado, na medida em que essas agentes
econômicas recebem incentivos para movimentar algum tipo de mercado. Acreditamos que a
ideia de inovação distribuída (YOO
et al
., 2012) cabe ao presente caso, na medida em que

essas agentes cooperam para a dinâ
mica dos mercados e criam sistemas de confiança em
relação aos consumidores (PARKER
et al
., 2016).
Outro aspecto importante é o que se relaciona ao processo de financeirização trazendo
à tona uma mudança em relação aos mercados tradicionais que se dá atrav
és da alocação de
recursos ociosos, da redução dos custos de transação (através da aproximação da oferta e
demanda) e da redução de custos diretos, a saber, pesquisa, negociação e implementação de
custos indiretos, tais como, a manifestação das assimetrias
informacionais (TRINDADE,

20)
. Podemos citar outras transformações mobilizadas pela financeirização da economia, a
saber, a metamorfose de produtos em serviços; o processo de reintermediação, ou substituição
de agentes ociosos pelas plataformas digitais
e a maior liquidez dos mercados. (SILVA
NETO; BONACELI; PACHECO, 2019).
Descrição e análise dos dados
A escolha das perfiladas se deu a partir da busca por
hashtags
tais como,
healthy food;
equilibrealimentaire; veganfood; foodblogger; bienêtre;
wellness; reequilibragealimentaire
entre outros e que se alinhavam a temática da alimentação saudável. O segundo elemento
importante para a escolha das agentes foi o rastreio de perfiladas que morassem na cidade de
Paris.
Começamos a analisar as postagens
de perfis franceses do Instagram
logo que
chegamos
a
Paris. Passamos, portanto, três meses observando postagens e fotos de perfis de
lojas francesas de produtos saudáveis, perfis pessoais de franceses que se alimentavam de
forma saudável, de blogueiras
e
i
nfluencers
de alimentação saudável, nutricionistas,
especialistas em dieta e naturopatas. Observamos que a maioria desses perfis se encontravam
abertos e que quase nenhum deles tinha restrição para acesso, portando pudemos seguir todos
os perfis para anali
sar as postagens e tomar notas. Decidimos trabalhar somente com a análise
de alguns perfis que foram observados durante três meses por meio de etnografia digital.
Analisamos, portanto, nove perfis. Segue abaixo um quadro que conta com a descrição de

Análise da proposição 1: Não há somente uma busca de interesse egocentrada pelo
melhor custo benefício
pela compra do alimento saudável, antes, existem estratégias
simbólicas e representacionais direcionadas pelos agentes
Incorremos primeiramente em analisar as primeiras dez postagens e fotos do perfil de
cada uma das escolhidas. Percebemos que nas anális
es realizadas com perfis do Instagram
existe um jogo complexo entre as representações simbólicas, axiológicas e morais dos atores e
as ações racionalizadas com base em uma representação do
homo economicus.
Ou seja,
conseguimos ora perceber a representação
racional e calculadora, ora a que representaria um
homo culturalis
. Conseguimos visualizar a seguir, esses dois tipos de comportamentos dentro
de um mesmo perfil, a depender do momento ou da circunstância, uma representação social
diferente pode ser aciona
da. A saber, em outra postagem e foto de uma salada com massa

postagens
anteriores
uma
confluência
de
diferentes
padrões

grupos

encontrando

sua
convergência,

pela

bem

por
um
mercado
cuja
alimenta

Outro

com que as lojas consigam mais seguidores e consequentemente, aumentem sua clientela, e ao
mesmo tempo, pode

se fazer uma boa estratégia de marketing coletando dados sobre o gosto
dos clientes. Novamente observamos um dire
cionamento para o consumo de produtos em
algumas lojas e, na maioria das vezes, as blogueiras ou parceiras dessas redes comerciais
ganham em troca uma contrapartida financeira, itens vendidos nas lojas para complementar
suas receitas ou uma boa repercussão
simbólica nas redes sociais. Nesse sentido, podemos
observar novamente como se consolidam as relações de troca, e que as mesmas não se
restringem a trocas monetárias, a saber, produtos podem ser trocados por favores de
marketing,
ou a contrapartida financ
eira pode ser trocada por prestígio, legitimidade, aumento
do número de seguidores nas redes sociais.

Outra lógica que segue dentro dos perfis que possuem mais seguidores não é abordar
somente um tema, mas tocar em aspectos de sua trajetória pessoal. Desta forma, os perfis
ficam mais di
nâmicos e agregam mais seguidores que buscam cada vez mais seguir perfis de
pessoas de carne e osso e não perfis que só mostram produtos e marcas. A passagem abaixo
demonstra esse fato, no qual a perfilada nos mostra ser cozinheira, mãe, saudável e se
preo
cupar com o meio ambiente:

coleta seletiva, etc.), me colocar menos barreiras na minha vida, encontrar o
equilíbrio entre esposa e mãe...

A perfilada na citação anteri
or relata que ficou muito tempo cuidando de seu bebê em
seus primeiros meses de vida e precisa ter mais tempo para o trabalho, não procrastinar, e
além de tudo, desenvolver gestos mais ecológicos, como fazer compostagem, encontrar
menos barreiras e ter um
equilíbrio entre ser mulher e mãe. Ou seja, vemos, portanto, um
desabafo de uma mulher que acaba de estar imersa nos afazeres de mãe e que precisa retomar
a sua vida, para além da entrega de si e do cuidar do “outro”.

Observamos que muitas blogueiras já
utilizam a estratégia de Marketing Digital, de
mostrar
-
se humana e “de carne e osso” para conquistar um maior número de seguidores e
maior estabilidade nas redes sociais. Ao mesmo tempo, observamos que outros perfis menores
de pessoas “comuns” que gostam d
e postar fotos sobre o seu estilo de vida começam a adotar
as mesmas estratégias de Marketing Digital de forma isomórfica (DIMAGGIO; POWELL,
1991).
No entanto, para além do Marketing Digital, conseguimos observar através da análise
da Sociologia Econômica,
elementos de uma troca entre seguidor e perfilado, que não é
somente monetária e financeira. Observamos uma troca composta de elementos como a busca
de empatia, de solidariedade do outro (através de incentivos e sugestões nos comentários),
elementos de pa
rtilha, de associação de gostos, a saber o estilo de vida ecológico, o estilo de
alimentação saudável, etc. Nesse sentido, Steiner (2016) cita Durkheim, assinalando que não
são somente os interesses que performam a relação de compra e venda, a saber, exist
em outras
paixões intrincadas mesmo em meio a uma relação comercial egoísta. Por isso, podemos
compreender que existe uma conexão entre elementos, tais como, “grupo e moral” que se
consolida a partir das relações de troca de mercado. Logo, podemos refletir
sobre o mercado
da alimentação saudáve
l com base em
relações e trocas que ultrapassam a troca comercial
egoísta, antes, caminham para a construção de relações com potenciais altruístas e solidários.

Análise da proposição 2: Uma possível inovação social
na alimentação saudável advém
dos grupos de elites que evocam narrativas tradicionais, rurais, de retorno a natureza
Podemos atestar que a maioria das perfiladas que se alinham a um
a alimentação
saudável, partem da invocação e delegação de
um tipo de con
sumo específico, a saber, a
defesa do saudável, do orgânico, do produto da estação (não poluidor), da compra a partir do
pequeno agricultor e da produção local
(denominada circuito curto)
. No entanto, por mais que
o circuito cu
rto na França (algo semelhant
e à
agroecologia no Brasil) busque ser uma
alternativa ao modelo dominante de mercado, não deixa de ser um projeto de elite
,
na medida
em que a tomada de decisão
,
em boa parte das vezes
,
não parte do pequeno agricultor, antes,

um consumo que é marcadamente burguês, taxativamente luxuoso, alicerçadamente caro,

com a tese da expansão de um

burguesamento global a partir deste
estilo de vida e do consumo.

Lembramos que atualmente o que mais se ouve no que diz respeito
a “boa alimentação” e a “alimentação saudável” é a palavra “qualidade”, em nosso campo
etnográfico na França. Existe um debate sobre o termo “qualidade”,
uma vez que, Fischler
(1990) afirma que a palavra “qualidade” define uma alimentação de classes mais altas, ou
seja, essa palavra aparecia muito
nas

existência de uma motivação para divulgar uma cooperativa de produtores locais, a fim de que
se efetive uma troca monetária, mas ao mesmo tempo, mostra que
a maternidade abriu
possibilidades para que modificasse o seu estilo de vida alimentar. Ao mesmo tempo abre a
possibilidade para sensibilizar outros seguidores para que passem a refletir sobre a proteção

de que eles possam refletir sobre a sua forma de consumo. A troca não monetária inscrita a
partir da cooperação com o pequeno agricultor, a sensibilização com o planeta, e abertura que
advém da maternidade são traç
os que se ligam diretamente a nossa Proposição 1, de que “Não
há somente uma busca de interesse egocentrada pelo melhor custo benefício na compra,
existem estratégias simbólicas e representacionais”.
Para além da argumentação
anterior, alguns elementos do
post
de Laure nos remetem a
outra proposição, a saber,
proposição 3:
“
As motivações de consumo para alimentação
saudável podem ser múltiplas e não somente disposicionais (motivos de saúde, bem

estar,
preocupação com corpo, reivindicações coletivas; as inv
ocações ecológicas seguem para
segundo plano)”. Essa é uma das proposições que se alicerça no trabalho de Gojard,
Dubuisson
-
Quellier
e
Veron, (2016) e de suas entrevistas sobre consumo alimentar na França.
De acordo com os autores
, o meio ambiente não ativ
aria nenhum contra dom por parte dos
grupos sociais aos quais pertencemos. Já os elementos vinculados aos discursos da boa saúde
e da boa alimentação, estes sim, se inscreveriam dentro da política do contra dom retornado
pelos grupos sociais. Logo, a persp
ectiva da preocupação com o meio ambiente só seria
acionada na medida em que, algumas circunstâncias e imprevistos da vida cotidiana pudessem
modificar a rotina alimentar e até mesmo o estilo de vida.
É no sentido da argumentação anterior que se circunscr
eve a fala supracitada da
perfilada já que, foi justamente a situação de se tornar mãe, de cuidar de outro ser, que faz
com que Laure mudasse a sua rotina alimentar e ampliasse a sua reflexão para se auto
sensibilizar quando ao meio ambiente. Cabe destacar
que Gojard, Dubuisson
-
Quellier e
Veron, (2016) citam exatamente essa situação, o fato de tornar
-
se mãe, como uma das
circunstâncias de mudança de rotina de seus entrevistados.
Esse processo de interiorização
que ocorre com base em acontecimentos
e ocorrên
cias
da vida cotidiana, fazem com que a perfilada passe a sensibilizar coletivamente os seus
seguidores. Logo, nossa proposição coaduna com esse caso específico, na medida em que
observamos que foi o acontecimento “maternidade” que despertou na perfilada e
sse tipo de
sensibilidade, situação que é confirmada pela mesma em seus
posts
.
Podemos usar outra situação que se conecta com a análise anterior, a saber, outra
perfilada com o IG “comum”, e nada comercial, como
Anaïs,
nos mostra que a alimentação
saudável, muitas vezes se associa a práticas para melhorar a saúde, como é o caso citad

um acontecimento cotidiano, ou de dados ocasionais, como a constatação de uma doença,

r. Essa implicação faz com que a perfilada comece
a fazer as suas postagens de alimentos saudáveis. Desta vez, serão destacados os produtos sem
glúten e sem lactose. Suas postagens por sua vez, mobilizam uma grande gama de seguidores
e, percebemos que, Anä
is também busca isomorfizar seu perfil com relação a outros IGs que
possuem mais seguidores. Outra perfilada como Lara menciona a mudança da alimentação
devido a motivação para se ter mais saúde corporal em seu blog:

Em contrapartida, algumas das perfiladas possuem uma “vida verde” e mais ecológica,
é o caso do perfil de
Claire, que mostra muitas fotos de espaços verdes, de p

legumes e verduras. Verificamos em seu perfil que a mesma assinala que para sempre em
sítios e fazendas, a fim de comprar os seus produtos naturais, e considera ter uma
green life
,
consumindo produtos locais e de zero desperdício. É cozinheira
de alimentos saudáveis e
cozinha por encomenda para pessoas que exigem alimento sem glúten e sem lactose.
Outras
perfiladas como as entrevistadas a seguir, para além de ter uma “vida verde”, invocam suas
seguidoras a terem um consumo mais responsável e ec
ológico:
Armelle: hoje, mais do que nunca, percebo o quanto temos que cuidar do
nosso planeta. E, em nossa escala, todos podemos fazer esforços em nosso
consumo e consumir de forma mais responsável, adotando alguns gestos
diariamente e limitando nossos re

Observamos, portanto, que as práticas de alguns indivíduos podem estar associadas a
situações de preocupação com o meio ambiente, (não descartar alimentos, usar alimentos
naturais
, consumir produtos da estação) mas elas subscrevem outros objetivos, tais como,
economia, saúde, gosto e não necessariamente acionam a preocupação ambiental em primeiro
lugar. A última, aparece como decorrente de outras motivações mais destacáveis. (GOJAR
D;
DUBUISSON
-
QUELLIER;
VERO
N, 2016). Portanto, podemos observar que através das
análises das práticas de consumo dentro das instâncias setoriais destacadas acima, as nuances
e as especificidades das falas das perfiladas podem nos levar a conclusões que ultrapassem a
lógica das propr
iedades constitutivas, ou disposicionais dos grupos profissionais e das classes
sociais. Os autores assinalam que podem haver quebras na rotina e práticas de bifurcação nas
trajetórias dos indivíduos. (BESSIN; BIDART; GROSSETTI, 2010).
A saber, construções
cotidianas como a origem de um casal, problemas de saúde, o
advento de filhos na família, a ausência dos filhos em casa, podem mudar as regras e normas
no que diz respeito ao consumo dos alimentos, as maneiras de se portar quanto a alimentação
e a preocup
ação ou não com questões ambientais. Portanto, as quebras de rotina são
elementos fundamentais para refletirmos sobre as dinâmicas de consumo alimentar. Os
apontamentos das práticas microssociológicas sobre consumo alimentar nos direcionam para
reflexões i
mportantes no que diz respeito a uma macrossociologia e as relações entre
indivíduo e estrutura. As reorientações das trajetórias nos mostram a existência de um espaço
social mais fluido e mais dinâmico, no qual acontecimentos cotidianos podem moldar e
mod
ificar algumas ações sociais, hábitos e rotinas, no caso específico de um estudo sobre
opções e consumo alimentar.
Considerações
f
inais
Buscamos no presente artigo apresentar a ideia de que para a Sociologia Econômica, a
ideia de mercado ultrapassa a l
ógica do mercado regulador ortodoxo. A última, por sua vez,
consegue verificar construções sociais, políticas, culturais que se configuram por traz da ideia
monotemática da maximização dos interesses e do cálculo. Acreditamos que o estudo da
alimentação sa
udável
–
na França, em específico no presente trabalho,
–
nos abre portas para
estudarmos as motivações relacionadas ao consumo dos “comedores”, que por sua vez,

ultrapassam a lógica da procura e demanda, na medida em que acionam elementos simbólicos,
a pa
rtir da
alimentação saudável, justa, sustentável, ética e ecológica. Percebemos em nossas
reflexões e análises que o produto comprado, no caso do alimento saudável, não é um produto
real, o mesmo adquire valor e centra
-
se na ideia de gosto (BOURDIEU, 2008)
,
especificidades culturais (MORIN, 1973), categorias e regras (FISCHLER, 1990) que
ultrapassam as lógicas de consumo utilitárias ou de disponibilidade.
Percebemos que a maior parte das citações das
influencers
digitais se referiam à
alimentos locais, prod
utos orgânicos,
slow food,
do circuito curto, sustentáveis e até mesmo
patrimonializados (
Terroir
). Refletimos que esse mercado dos produtos saudáveis é
direcionado com base em
um gosto de luxo (BOLTANSKI;
ESGUERRE,
2017) por parte de
estratos das elites f
rancesas. Essas, por sua vez, impulsionam dinâmicas com base em estilos
de vida que são isomorfizados por diferentes classes sociais. (DIMAGGIO; POWELL, 1991).
No entanto
,
a partir dos estudos de Gojard, Dubbuisson
-
Quellier
e
Veron (2016),
constatamos que
para além da alimentação saudável estar alicerçada em representações e
implicar em uma isomorfização de um estilo de vida e de disposições de elite, as motivações
para se obter práticas sociais cotidianas de uma alimentação saudável e sustentável, podem se
r
moldadas pelos grupos que consomem esse tipo de alimentação, com base em eventos,
processos, acontecimentos cotidianos que promovem trajetórias bifurcativas. Portanto, para
além do gosto, existem outros elementos cotidianos que podem acionar as práticas
de
alimentação saudável, configurando práticas motivadas pela saúde, pelo corpo, pela
maternidade, por razões ecológicas, entre outras.
Para alimentar a discussão teórica supracitada trabalhamos com discursos de
blogueiras e
influencers
da rede social do
Instagram, para averiguar três proposições
importantes destacadas anteriormente. A primeira, a da existência de estratégias simbólicas e
representacionais que circundam as novas “profissionais” e difusoras desse tipo de mercado.
A segunda referente as narr
ativas elitizadas evocadas por esses grupos, e a terceira
direcionada as múltiplas motivações que implicam no estilo de vida da alimentação saudável,
que pode por sua vez, ultrapassam o jogo disposicional e de orquestração de
habitus.
Constatamos, portant
o, que existem estratégias de troca, de partilha, de solidariedade e
simbólicas por traz dos discursos das difusoras e das novas “profissionais” da alimentação
saudável, para além das ações calculadoras e maximizadoras do
homo economicus.
Esses
discursos e
narrativas são provenientes de uma elite francesa que possui meios materiais para
sustentar esse mercado e disseminá
-
lo através de um estilo de vida de luxo e aburguesado. Por
fim, constatamos que a alimentação saudável não se coloca somente circunscrita
a um
habitus

ABSTRACT
:
The presented paper relies on inspiration from Economic Sociology and seek to
analyze the theme of healthy eating in France. For this, we will analyze the discourses of French
bloggers and influencers adept
to
this type of
eating
on the social network Inst
agram. Our goal
is to work with three theoretical propositions: to unveil some representational and symbolic
strategies of the studied agents beyond
homo economicus
; to verify elitized properties conveyed
based on a luxury market; to ascertain the evidence
of the agents' tastes and dispositions, as
well as, of fragments of trajectories and eventual and occasional motivations to direct this type
of consumption. The method used will be the analysis of the social network contents in a
qualitative way. Our anal
ysis evidences the verification and affirmation of the three
aforementioned research propositions.

estratégias representacionais e simbólicas das agentes estudadas para além do homo
economicus; verificar propriedades elitizadas veiculadas com base em um mercado de luxo;
averiguar a evidência dos gostos e disposiçõe
s dos agentes, bem como, de fragmentos de
trajetórias e motivações eventuais e ocasionais para direcionar esse tipo de consumo. O
método utilizado será a análise dos conteúdos da rede social de forma qualitativa. Nossa
análise evidencia a averiguação e a a
firmação das três proposições de pesquisa supracitadas.

El artículo presentado está inspirado en la Sociología Económica y buscará
analizar el tema de la
alimentación saludable en Francia. Para ello analizaremos los discursos
de blogueros e influencers franceses adeptos a este tipo de comida en la red social de
Instagram. Nuestro objetivo es trabajar con tres proposiciones teóricas: develar algunas
estrateg
ias representativas y simbólicas de los agentes estudiados más allá del homo
economicus; verificar las propiedades de élite atendidas en base a un mercado de lujo;
investigar la evidencia de los gustos y disposiciones de los agentes, así como fragmentos de
trayectorias y motivaciones ocasionales y ocasionales para orientar este tipo de consumos. El
método utilizado será el análisis de los contenidos de la red social de forma cualitativa. Nuestro
análisis evidencia la investigación y afirmación de las tres p
ropuestas de investigación

Introducion
One of the fundamental roles of Economic Sociology is to seek to understand how
agents influence the configuration and reconfiguration of markets, or to visualize how
institutions
-
in this case, invisible institutions, from the diffusers or delegates of t
he online
market
-
reproduce strategies of control as dominant agents, through a space of interactions that
is economic, but also political and social. It is observed that these “militants of healthy eating”
can use instruments, such as social movements, e
xtremely precise social constructions such as
those of law, jurisprudence, ethics, and social justice (STEINER; VATIN, 2009). Therefore,
our first move will be to invoke Economic Sociology for the present article and overcome the
battle between
homo ration
alis
versus
homo culturalis
. In other words, it is necessary to see the
multiple rationalities and understand interest as an arbitrary data, that is, to visualize the
possibility of the existence of multiple interests always determined by social constructi
on, in a
specific time and space, as Wacquant and Calhoun (1989) point out.
We evidence, therefore, the emergence of a group of players and digital influencers,
who mobilize social networks, mediating and influencing the expansion of this type of niche or
market and we observe ethnographically that most of these "delegates" are middle and upper
class women, guided by an eco
-
habitus
and a healthy lifestyle. For this reason, the second
movement of this article will be towards the analysis of these different lifestyles from their
posts on Instagram.
In a third moment of the article, we will verify based on theoretical reflections and
a
nalysis of the field that these practices would not only be linked to dispositional mechanisms
of distinction, rather, these attitudes, actions or choices would be formatted based on events,

processes, happenings and bifurcational moments in their trajecto
ry. These facts show us how
the market and the historical changes in financial capitalism could also intervene, mobilizing
changes in tastes and lifestyles. Therefore, we will work in this text with elaborations and
reflections based on these three aforeme
ntioned moments.
Economic/financial sociology and food
It is observed that some authors share a rationalizing and calculating logic of homo
economicus to explain the functioning of food choices. Marvin Harris (1986) with his work

food and culture
questions Lévi
-
Strauss' analysis of the existence of a
symbolic load, of thought and belief behind social choices and actions. Following Merton's
functionalist stance, he proceeds thinking that actions take place as a function of material
and
ecological conditions, and not symbolic ones. Namely, the motivations that affect the diet so
that Jews do not eat pork, and Indians cows, are understood for material, sanitary, ecological
and not by religious
-
symbolic

reasons. In this sense, the au
thor helps us to think about our
research topic, as we ask
–
from the reflection of the interdiction and taboos, what should or
should not be eaten
–
with the auspices of the instrumentalization of healthy eating, about which
would be the real motivations
of eaters for healthy, fair, sustainable, ethical and ecological food,
and how did this type of market develop intensely after the 2010s in France?

Morin (1973) will help us to build our proposition that is based on social actions
represented by symbols
and values within a social
construct
. In this sense, the movement that
Morin (1973) makes in the 1970s will allow us to reflect on a sociology of the eater, since our
biological activities such as eating, defecating, drinking, are closely linked to interd
ictions,
values, symbols, myths, rites, that is, what is more specifically cultural. In 1985, the work

As of 2010, the product of
terroir
in France is seen as sustainable, mainly due to the debates that took place at
the conference on sustainability in Rio de Janeiro. At the same time, the or
igin, the issue of consumer safety in
relation to the products, and the food crises, are transformed and open space for the connotation of the “local”
product. In other words, the valued commodity will no longer be the exotic, the exceptional, but the ever
yday, the
banal. From this moment onwards, the possibility of thinking of the local, regional, rural product, which does not
undergo intense industrialization processes, as a good product for health opens up.

us theoretical apparatus to convey our propositions (DURAND, 1960).
Despite Harris' (1986) materialist explanations, the process of transforming natural
objects into food and nutrients is not reduced to utilitari
an or availability logics (SALHINS,
1976), rather, it is inscribed within the classification system (DOUGLAS, 1971)

. Food presents
a logic of rationality that is registered through representations, the imaginary and culture, that
is, the biological need
to eat is also inserted within a system of values that would be articulated
on totemic (LÉVI
-
STRAUSS, 1962), sacrificial (GRODZYNSKI; DÉTIENNE; VERNANT,
1980), hygienist, rationalist, aesthetic logics, or combining various forms of rationality, which
class
ify foods into vegetables and animals, consumables and non
-
consumables (classification
logics).
In addition to the discussion on the utilitarian logic of availability or symbolic food, we
can cite a sociological thesis that has been followed by scholars th
at combines reflection on
consumption and taste. Authors such as Moulin (1975), Elias (1973) and Lambert (1987)
advocate the thesis that the world is becoming “bourgeois” in terms of food consumption. In
other words, this means that the bourgeois taste and
lifestyle have spread around the world,
contaminating other social classes and becoming legitimate. When we think about healthy or
ecologically viable food, we can ask ourselves if this would not be the case, since we see that
this type of food, typically
valued by the upper or elite classes, has begun to spread across all
supermarkets, fairs, shops, restaurants, bistros, both French and Brazilian. The perception we
have is the occurrence of a process of massification of healthy products or isomorphization
(organic
5
,
terroir
6
, slow food, local, sustainable products, short circuit) (DIMAGGIO;
POWELL, 1991). The question that arises regarding the sociology of tastes and the study of

classes is whether this type of consumption spreads to all social classes and cleavages, or is it
restricted to an elite minority?

The authors work with the hypothesis about the biographical trajectory, (social class and
taste), or rather, with properties such as the capitals addressed by Pierre B
ourdieu, which would
direct the behaviors towards a consumption of healthier and more balanced products, on the
part of higher social classes. In other words, “responsible consumption can be seen as an
expression of a specific “eco

habitus
” for consumers w

However, the authors realize that in addition to the properties inscribed within the
trajectories of individuals, there are other elements that must be
taken into account throughout
the consumption process, namely, the social changes that occur around individuals and life
styles. In other words, the authors' clues are circumscribed behind daily actions, or daily eating
practices and how they change with c
ircumstances and unforeseen events, modifying the eating
routine, even within a prescribed biographical trajectory marked by certain properties and
capitals. Therefore, the authors reflect on a redefinition of the idea of
“disposition” or social
disposit
ions, since the sociology of tastes reflects on the dispositions built by family, friends
and does not count on the fact that dispositions can be modified according to the mechanisms
of market mediation, or other social factors that are inscribed on the ba
sis of more specific
interactional processes, or what we can indicate as the interpretivist paradigm, discussed by
Burrell and Morgan (1979).

We believe that further analysis needs to be done for this verification. However, we follow the lead that different
groups and strata have incorporated this type of healthy eating in France, in thei
r own way. They often cannot
access products from more expensive stores, however, they find other means of accessing these foods on large
supermarket platforms, through short circuit and neighborhood associations. We do not believe that this logic is
wides
pread among popular groups, but it begins to be valued by these groups little by little. These statements are
based on the ethnographic study that we carried out in the city of Paris in 2019 and 2020 in our postdoctoral
studies.

Problems and propositions analyzed
After carrying out the aforementioned theoretical reflection, we list three
propositions
that can be analyzed from the profiles of French bloggers and digital influencers. Such as:
Proposition
1: there is not only a self
-
centered pursuit of interest for the best cost
-
benefit for
the purchase of healthy food, rather, there are sym
bolic and representational strategies directed
by the agents;
Proposition
2: a possible social innovation in healthy eating comes from elite
groups that evoke narratives (traditional, rural, return to nature);
Proposition
3: the
consumption motivations for
healthy eating can be multiple and not only dispositional (namely,
reasons for health, well
-
being, concern for the body, collective and ecological claims).
Bloggers and digital influencers within the platform economy and the financialized
economy
Before discussing the data on the performance of French bloggers and influencers in
social networks, it is important that we contextually situate them in the face of the changes of
current capitalism and its new ways of acting. One of the important element
s that mark the
performance of these agents today is the entry into the so
-
called platform economy, which
marks the passage from a new economy of the 1990s to a digital economy from the 2000s
onwards. Therefore, the platform can be formatted as a new form
of business organization that
presents itself as a new business model.
In this sense, in the case of the digital world, unlike a fair in the Middle Ages, market
makers coordinate and manage the market through digital platforms such as Airbnb, Uber,
iFood,
Gympass, Arco Educação, 99, Nubank, among others. It is worth mentioning that some
platforms manifest themselves as a social network (as is the case of facebook) and others are
articulated through social media (SILVA NETO; BONACELLI; PACHECO, 2019).
In the
case of the intervention of bloggers and influencers, we visualize them through a
kind of intermediary action of the market process, insofar as these economic agents receive
incentives to move some type of market. We believe that the idea of distributed i
nnovation
(YOO
et al.
, 2012) fits the present case, as these agents cooperate for the dynamics of markets
and create systems of trust in relation to consumers (PARKER
et al.
, 2016).
Another important aspect is related to the financialization process, bring
ing to light a
change in relation to traditional markets that takes place through the allocation of idle resources,
the reduction of transaction costs (through the approximation of supply and demand) and the
reduction of of direct costs, namely, research,
negotiation and implementation of indirect costs,

such as the manifestation of informational asymmetries (TRINDADE, 2020). We can cite other
transformations mobilized by the financialization of the economy, namely, the metamorphosis
of products into servic
es; the reintermediation process, or replacement of idle agents by digital
platforms and greater market liquidity (SILVA NETO; BONACELI; PACHECO, 2019).
Description and analysis of data
The choice of profilers was based on the search for hashtags such a
s
,
healthy food;
equilibrealimentaire; veganfood; foodblogger; bienêtre; wellness; reequilibragealimentaire
among others and that were aligned with the theme of healthy eating. The second important
element for choosing the agents was the screening of profi
les who lived in the city of Paris.
We started analyzing French Instagram profile posts as soon as we arrived in Paris. So
we spent three months looking at posts and photos from profiles of French health food stores,
personal profiles of French people who
ate healthily, healthy eating bloggers and influencers,
nutritionists, diet experts and naturopaths. We observed that most of these profiles were open
and that almost none of them had access restrictions, so we were able to follow all the profiles
to analy
ze the posts and take notes. We decided to work only with the analysis of some profiles
that were observed during three months through digital ethnography. We therefore analyzed
nine profiles. Below is a table with the description of each of the influencer

ost influencers analyzed are nano and micro influencers. When we observe less than 10
thousand followers, influencers are called nano influencers, whereas those with more than 10 thousand followers
are micro influencers (in a group they can reach a signifi
cant audience). After these numbers hierarchically we
have the intermediate influencer (100 to 500 thousand followers) the macro influencer (500 to 1 million followers)
and who has influence in specific segments, and finally, the mega influencer (more than
one million), whose stars
and celebrities are highlights. It is important to complement that marketing managers do not rely only on the
number of followers to determine whether an influencer has legitimacy (influencer marketing) and delegation
within a gr
oup, but other pillars are analyzed, such as reach, relevance and resonance
(POLITI, 2013)

Analysis of proposition 1: There is not only a self
-
centered pursuit of interest for the best
cost benefit for the purchase of healthy food, rather, there are symbolic and
representational strategies directed by agents
We first incu
rred in analyzing the first ten posts and profile photos of each of the chosen
ones. We noticed that in the analyzes carried out with Instagram profiles there is a complex
game between the symbolic, axiological and moral representations of the actors and t
he
rationalized actions based on a representation of homo economicus. In other words, we can
sometimes perceive the rational and calculating representation, sometimes the one that would
represent a homo culturalis. We can see below, these two types of beha
viors within the same
profile, depending on the moment or circumstance, a different social representation can be
triggered. Namely, in another post and photo of a salad with very appetizing pasta, Lara
encourages not only healthy eating, but the purchase o
f the products she used in the recipe on
another IG:
Lara: Tuesday: This afternoon on my low GI (glycemic index) meal plan it's
"Sweet Bowl" and tonight it's this @marcadomacarrao coral lentil penne salad
with pesto, broccoli, arugula, sun

is,

addition

the
central
focus
of
the
profile,
which
would
be
to
expand
and
explore
the
idea
of
a
balanced
and
healthy
diet,
the
profile
encourages
the
purchase
of
products
that
the
influencer
uses
in
the
healthy
recipe,
in
stores
that
are
suggested
by
the
profiled.
Therefore,
the
idea
of
defending
and
propagating
adequate
food
for
health
goes
together,
and
at
the
same
time,
the
logic
of
selling
and
buying
this
food
within
a
model,
or
a
type
of
capitalism
that
fits
to
the
digital
univers
e.
The
possible
morality
and
asceticism
of
the
cultivation
of
the
body,
of
well
-
being,
of
balance,
of
the
Aristotelian
fair
measure,
of
the
acclaimed
balance
between
body
and
spirit,

the

the

which
have
harmful
implications
for
the
environment)

direction towards the consumption of products in some stores and, most of the time, bloggers
or partners of these commercial networks earn in exchange a financial compensation, items sold
in stores to complement
their recipes or a good symbolic repercussion on social networks. In
this sense, we can observe again how exchange relations are consolidated, and that they are not
restricted to monetary exchanges, namely, products can be exchanged for marketing favors, o

the financial counterpart can be exchanged for prestige, legitimacy, increase in the number of
followers on social networks.

Another logic that follows within the profiles that have the most followers is not to
address o
nly one topic, but to touch on aspects of their personal trajectory. In this way, the
profiles become more dynamic and add more followers who increasingly seek to follow profiles
of real people and not profiles that only show products and brands. The passa
ge below
demonstrates this fact, in which the profiled woman shows us that she is a cook, a mother,
healthy and cares about the environment:
Lara: For my part, it starts right away with a good resolution: keep the little
one several hours to rest
today (after 8 and a half months of full custody
without separation). It is difficult, but it was also a great necessity. She is at
her grandmother's house for a day. (Our translation).
Lara: For this year, I also want to dedicate more time to myself and
my work,
as I dedicate myself to taking care of my daughter full time, finishing my move

The one profiled in the previous quote reports that she spent a lot of time taking care of
her baby in its firs
t months of life and needs to have more time for work, not to procrastinate,
and above all, to develop more ecological gestures, such as composting, finding fewer barriers
and have a balance between being a woman and a mother. In other words, we see, there
fore, an
outburst of a woman who has just been immersed in the tasks of a mother and who needs to
resume her life, beyond the delivery of herself and taking care of the “other”.

We observe that many bloggers already use the Digital Marketing
strategy, to show
themselves human and “flesh and blood” to gain a greater number of followers and greater
stability on social networks. At the same time, we observed that other smaller profiles of
“ordinary” people who like to post pictures about their li
festyle begin to adopt the same Digital
Marketing strategies in an isomorphic way (DIMAGGIO; POWELL, 1991).
However, in addition to Digital Marketing, we can observe, through the analysis of
Economic Sociology, elements of an exchange between follower and
profiled, which is not only
monetary and financial. We observed an exchange composed of elements such as the search for
empathy, solidarity with the other (through incentives and suggestions in the comments),
elements of sharing, association of tastes, nam
ely the ecological lifestyle, healthy eating style,

etc. In this sense, Steiner (2016) cites Durkheim, noting that it is not only interests that perform
the buying and selling relationship, namely, there are other intricate passions even in the midst
of a
selfish commercial relationship. Therefore, we can understand that there is a connection
between elements, such as “group and morality” that is consolidated from the market exchange
relations. Therefore, we can reflect on the healthy food market based on r
elationships and
exchanges that go beyond selfish commercial exchange, rather, they move towards building
relationships with altruistic and solidary potentials.
Analysis of proposition 2: A possible social innovation in healthy eating comes from elite
gr
oups that evoke traditional, rural narratives of return to nature
We can attest that most of the profiles that are aligned with a healthy diet, start from the
invocation and delegation of a specific type of consumption, namely, the defense of the healthy,
the organic, the seasonal product (non
-
polluting), from purchase to from the small farmer and
local production (called short circuit). However, as much as the short circuit in France
(something similar to agroecology in Brazil) seeks to be an alternative
to the dominant market
model, it is still an elite project, insofar as decision
-
making, in large part sometimes, it is not
part of the small farmer, but an elitist Top
-
down imposition, arising from the initiative of large
corporations (CHIFFOLEAU; PREVOST,
2012).
However, beyond the discussion of cannibalization or not of small producers through
the dictates of a dynamic production and elitist food (which is not the central object of this
article), we will seek to relate the performance of the agents studie
d to a consumption that is
markedly bourgeois, downright luxurious, fundamentally expensive (BOLTANSKI;
ESGUERRE, 2017) and corroborates the thesis of the expansion of a global bourgeoisie from
this lifestyle and consumption.
Soon, we will work with a seri
es of illustrations of collected data that can reinforce our
proposition. Namely, we understand the pursuit of luxury when we incur the pursuit of
#healthydessert. We found the following post on a French profile that invites followers: make

We noticed that the aforementioned speeches portray a food taste of a French elite,
which possibly has high financial means to maintain this ty
pe of purchase and lifestyle. We
remind you that the word “quality” is most often heard in terms of “good food” and “healthy
food” in our ethnographic field in France. There is a debate about the term “quality”, since
Fischler (1990) states that the word “
quality” defines a higher
-
class diet, that is, this word
appeared a lot in French polls in 1985 (INSEE, 2020), based on the speeches of mothers who
sought a more balanced diet.
Analysis of proposition 3: The consumption motivations for healthy
eating can be multiple
and not only dispositional (reasons for health, well
-
being, concern for the body, collective
and ecological claims)
Another profile like that of Laure, who is a mother, cares about healthy eating, posts
simple recipes, and is also a
blogger, shows that her concern for healthy eating changes when
she becomes a mother. At the same time, we can't help but see the blogger's engagement with
the brand of the organic products cooperative that she recommends:
Laure: Since launching this acc
ount, I've been more sensitive to the products
I consume, and even more so since I became a mother. Consuming organic is
becoming aware to protect our planet, take care of nature. The cooperative
@cooperativename has been developing its agricultural practi
ces for several
years to be part of a more respectful approach to nature and men. If the
production is not 100% organic, the cooperative's farmers will be able to
choose the organic route. This takes 2 or even 3 years, depending on the type

The previous speech is important, as it shows us again how we can observe the existence
of a motivation to promote a cooperative of local producers, in order to effect a monetary
exchange, but at the same time, it shows th
at motherhood opened possibilities for it to change
your food lifestyle. At the same time, it opens the possibility to sensitize other followers so that
they start to reflect on the protection of the planet and the environment. Finally, she still poses

monetary exchange inscribed from the cooperation with the small farmer, the awareness with
the planet, and the openness that comes from motherhood are traits that are di
rectly linked to
our Proposition 1, that “There is not only a self
-
centered pursuit of interest for the best cost
-
benefit in the purchase, there are symbolic and representational strategies”.
In addition to the previous argument, some elements of Laure’s p
ost refer us to another
proposition, namely, proposition 3: “The consumption motivations for healthy eating can be
multiple and not only dispositional (reasons for health, well
-
being, concern for body, collective
claims; ecological invocations take a back
seat)”. This is one of the propositions that is based
on the work of Gojard, Dubuisson
-
Quellier and Veron, (2016) and their interviews on food
consumption in France. According to the authors, the environment would not activate any
counter
-
gift on the part
of the social groups to which we belong. On the other hand, the elements
linked to the discourses of good health and good nutrition would be inscribed within the policy
of counter
-
gift returned by social groups. Therefore, the perspective of concern for th
e
environment would only be activated to the extent that some circumstances and unforeseen
circumstances of everyday life could modify the food routine and even the lifestyle.
It is in the sense of the previous argument that the aforementioned speech of th
e profiled
is limited, since it was precisely the situation of becoming a mother, of taking care of another
being, that makes Laure change her eating routine and expand her reflection to self sensitize
about the environment. It should be noted that Gojard,
Dubuisson
-
Quellier and Veron (2016)
cite this situation, the fact of becoming a mother, as one of the circumstances of change in the
routine of their interviewees.
This internalization process that takes place based on events and occurrences of
everyday l
ife, makes the profiled start to collectively sensitize her followers. Therefore, our
proposition is consistent with this specific case, as we observe that it was the “maternity” event
that aroused this type of sensitivity in the profiled, a situation that
is confirmed by her in her
posts.
We can use another situation that connects with the previous analysis, namely, another
one profiled with the “common” IG, and nothing commercial, like Anaïs, shows us that healthy
eating is often associated with practices
to improve health, such as is the case mentioned below:
Anaïs: Back in Paris, let's go for a new day of no
-
waste (no fiber) food.
However, tomorrow I will FINALLY learn more about all my digestive

implication makes the profiled start making h
er healthy food posts. This time, gluten

free products will be highlighted. Her posts, in turn, mobilize a wide range of followers,
and we noticed that Anais also seeks to isomorphize her profile in relation to other IGs that
have more fol
lowers. Another profiled like Lara mentions the change in food due to motivation
to have more body health on her blog:

plantations. We can see in her profile that she points out that she always stays in places and
farms, in order to buy her natural
products, and considers to have a green life, consuming local
products and zero waste. She is a health food cook and cooks to order for people who require
gluten
-
free and lactose
-
free food. Other profiles like those interviewed below, in addition to
havin
g a “green life”, invoke their followers to have a more responsible and ecological
consumption:
Armelle: Today, more than ever, I realize how much we have to take care of
our planet. And, on our scale, we can all make efforts in our consumption and
consum
e more responsibly, adopting some gestures daily and limiting our
waste. Here are some easy tips to get started...

not necessarily trigger environmental concern in the first place. T
he last one appears as a result
of other more remarkable motivations (GOJARD; DUBUISSON
-
QUELLIER; VERON, 2016).
Therefore, we can observe that through the analysis of consumption practices within the
sectorial instances highlighted above, the nuances and s
pecificities of the profiles of the profiles
can lead us to conclusions that go beyond the logic of the constitutive or dispositional properties
of professional groups and social classes. The authors point out that there may be breaks in
routine and bifurc
ation practices in the trajectories of individuals. (BESSIN; BIDART;
GROSSETTI, 2010).
Namely, everyday constructions such as the origin of a couple, health problems, the
advent of children in the family, the absence of children at home, can change the rules and
norms regarding food consumption, the ways of behaving regarding food and concer
n or not
with environmental issues. Therefore, routine breaks are fundamental elements to reflect on the
dynamics of food consumption. The notes of microsociological practices on food consumption
direct us to important reflections regarding a macrosociolog
y and the relationship between
individual and structure. The reorientations of the trajectories show us the existence of a more
fluid and dynamic social space, in which everyday events can shape and modify some social
actions, habits and routines, in the s
pecific case of a study on food options and consumption.
Final considerations
We seek in this article to present the idea that for Economic Sociology, the idea of
the
market goes beyond the logic of the orthodox regulatory market. The latter, in turn,
manages to
verify social, political, cultural constructions that are configured behind the monothematic idea
of maximizing interests and calculation. We believe that the study of healthy eating
-
in France,
specifically in the present work,
-
opens doors
to study the motivations related to the
consumption of "eaters", which in turn, go beyond the logic of search and demand, insofar as
they trigger symbolic elements, based on healthy, fair, sustainable, ethical and ecological food.
We realized in our reflec
tions and analyzes that the purchased product, in the case of healthy
food, is not a real product, it acquires value and focuses on the idea of taste (BOURDIEU,
2008), cultural specificities (MORIN, 1973), categories and rules (FISCHLER, 1990) that go
beyo
nd the logic of utilitarian consumption or availability.
We noticed that most of the citations from digital influencers referred to local foods,
organic products, slow food, short circuit, sustainable and even patrimonialized (
Terroir
). We
reflect that thi
s market for healthy products is directed based on a luxury taste (BOLTANSKI;

on lifestyles that are isomorphized by different social classes (DIMAGGIO; POWELL, 19
91).
However, from the studies of Gojard, Dubbuisson
-
Quellier and Veron (2016), we found
that in addition to healthy eating being based on representations and implying an
isomorphization of a lifestyle and elite dispositions, the motivations for obtain dai
ly social
practices of a healthy and sustainable diet, can be shaped by the groups that consume this type
of food, based on events, processes, daily happenings that promote bifurcative trajectories.
Therefore, in addition to taste, there are other everyday
elements that can trigger healthy eating
practices, configuring practices motivated by health, the body, motherhood, for ecological
reasons, among others.
To feed the aforementioned theoretical discussion, we work with speeches by bloggers
and influencers
from the Instagram social network, to investigate three important propositions
highlighted above. The first, the existence of symbolic and representational strategies that
surround the new “professionals” and diffusers of this type of market. The second r
efers to the
elite narratives evoked by these groups, and the third addresses the multiple motivations that
imply a healthy eating lifestyle, which can, in turn, go beyond the dispositional game and the
orchestration of

We note, therefore, that th
ere are exchange, sharing, solidarity and symbolic strategies
behind the discourses of the broadcasters and the new “professionals” of healthy eating, in
addition to the calculating and maximizing actions of
homo economicus
. These discourses and
narratives
come from a French elite that has the material means to sustain this market and
disseminate it through a luxury and bourgeois lifestyle. Finally, we found that healthy eating is
not limited to a habitus and class dispositions, since many of its adherents
opt for this lifestyle
due to micro
-
events and multiple daily processes, as well as the transformations of historical
cycles of capital that modify the market, and that in turn, drive the profiled to feed themselves
in this way.
