The volume known as "Apicius' ten books on culinary art" is one of the most atypical texts of the antiquity, whether for its singular character or whether for the impossibility of identifying its technical and thematic bonds. The procedures stablished for the French semioticist Françoise Bastide are used here to read both choices and elementary operations for kitchen, proposed in Apicius’ text. Keywords: De re coquinaria.
